Easy paleo summer salad

Packed with colorful vegetables, herbs, and a zesty dressing, this Summer Harvest Paleo Salad is not only nutritious but also bursting with flavor.

Don't let the name fool you though! While this salad is indeed inspired by the vibrant produce of summer, it's versatile enough to enjoy all year round. Whether you're craving a light lunch on a sunny day or looking for a nutritious side dish to accompany your cozy winter stew, this salad has got you covered.

Ingredients:

  • 1 cup cherry tomatoes, halved
  • 1 cucumber, thinly sliced
  • 1 bell pepper (any color), sliced into thin strips
  • 4-5 radishes, thinly sliced
  • 1/4 red onion, thinly sliced
  • A handful of mixed greens (like arugula, spinach, or baby kale)
  • 1/4 cup fresh mint leaves, roughly chopped
  • Extra virgin olive oil
  • Juice of 1 lemon
  • Salt and pepper to taste
  • Optional: A few slices of avocado or some nuts (like almonds or walnuts) for extra richness and texture

Instructions:

  1. Prepare the Vegetables: In a large mixing bowl, combine the cherry tomatoes, cucumber, bell pepper, radishes, red onion, and mixed greens. Toss them together lightly to distribute the ingredients evenly.
